Cheesecake In A Jar!

I love all things cheesecake!  
I recently came across this fun and easy 
cheesecake-in-a-jar idea.
I  thought you might like it too!

First, I began by donning my most beloved apron. (Grease stains and all!)   My sister (Kim) made it for me over twenty years ago.  I've re-stitched the pocket and some of the lace.  It's so fun to wear... I always feel like a housewife from the fifties, and that makes me smile!

I adapted an old cheesecake recipe that I had.  
You can also substitute 1 1/2 cups of graham cracker crumbs for the cookies.  
Just add 1/2 cup of sugar to the crumbs and butter.
This would be great with strawberries or blueberries!


Chocolate Chip Cheesecake in a Jar

  • 1 1/2 cups Oreo-like cookies, crushed 
  • 1/2 stick butter, melted
  • 1 (8 ounce) softened brick cream cheese
  • 1 (8 ounce) tub whipped topping
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • Mini chocolate chips
In a small bowl, combine the cookie crumbs, and melted butter until the crumbs are well coated. Spoon 1/8 of the mixture into each of 4 eight ounce mason jars.
With an electric mixer, beat together the cream cheese, whipped topping, vanilla, and sugar until light and fluffy. Stir in a few hand-fulls of chocolate chips.  Spoon onto the crumb mixture. Top with a bit more crumb mixture, then finish off the jar with the remaining cheesecake mixture. Cover and store in the fridge until ready to serve.

This can also be adapted for your gluten-free friends.  Just use gluten-free Oreo-like cookies.  (I recently made this for a friend and purchased the cookies from Walmart.)
